Grilled Chicken and potato wedges meal

As usual, a last minute meal for me is to see what we have and quickly come up with a meal plan. Tonight was no exception. I found frozen chicken breasts, a few potatoes that I needed to use up, some Fish Fry batter mix from Bass Pro shop, recently had bought some Louisiana style seasoning mix from the Dollar store, and a few cans of corn. I covered both sides of a few chicken breasts with the Louisiana style seasoning as it was thawing out. I pre-heated my oven to 425 degrees and started my barbecue grill. In the meantime I washed the potatoes and cut them into small wedges. In a ziplock bag I added about a fourth cup of Vegetable oil, sprinkled in some salt, pepper, and garlic powder and dumped some of the Fish Fry batter mix in another ziplock bag. I dumped the potato wedges into the oil and shook it all together until well coated. then transferred the wedges to the batter and coated all of them. I covered a cooking pan with foil and lightly oiled it. I placed all the wedges on the foil and placed the pan in the oven to cook for 30 minutes. I took some of the leftover oil from the bag I used for the potatoes and sprinkled some of it on top of the thawed chicken breasts and added a little more seasoning on top of the chicken. When the coals were hot on my grill I added the chicken breasts. It took about 30 – 35 minutes for them to cook which worked out perfectly for everything to be done about the same time. I started cooking the corn on my stove top in the last 15 minutes of when the rest of the food would be done. All in all everything turned out really well. The three of us really enjoyed the meal and it was fairly easy to prepare. The most hassle was the grilling itself which in itself was not so bad. I found out that the potato wedges turned out to so well baked in the oven that I am planning on keeping this as a side dish to pull out when we have potatoes and fish batter mix on hand. Actually the chicken turned out well too especially since the seasoning was so inexpensive. Hope this inspired you too to be creative with last minute meal plans!
